Breaded Coral Mushrooms & Eggs
Mushrooms don't have to be a side note — freshly foraged coral mushrooms, breaded and fried, hold their own next to a couple of eggs.
Ingredients
- A handful coral mushrooms
- 2 eggs
- olive oil or butter, for frying
- 1 clove garlic, minced
- Sriracha sauce
- salt & pepper
- red pepper flakes
Steps
- 01 Forage (or buy) a handful of fresh coral mushrooms. Ours came from practically our own backyard.
- 02 Whisk up an egg batter: crack the eggs, add the minced garlic and a squeeze of Sriracha, and beat together. Dip the coral mushrooms in the batter, then lightly flour them so they're ready for frying.
- 03 Fry the eggs in a hot pan with olive oil or butter — we did two eggs, folded over.
- 04 At the same time, fry up the battered coral mushrooms in their own pan, so everything finishes together.
- 05 Plate it up and enjoy. A sprig of cilantro or parsley on top adds a little color.
